(This tip features Leslie Cahill, CPT, who demonstrates how she prepares a “salad in a cup” while she is at work. Thank you Leslie for your time and expertise!)
One of the best ways to get your raw essential nutrients, enzymes, vitamins and minerals is with a green smoothie. A green smoothie helps to boost your immune system and helps to boost your energy! As Leslie says, it’s a salad in a cup! Here is the recipe:
Green Smoothie Recipe
Place into blender jar before you leave for work:
- ½ -1 c baby spinach leaves (handful) Vit A,E,C, K, Mg, Zinc, protein + more
- 1/3 cucumber sliced Vit A, C, K, Calcium, Iron, Phosphorous
- 1 celery stalk sliced Vit A, C, Calcium, Iron
- ½ fresh lemon (to squeeze) prevents food from browning
- ½ c (+/-) coconut water hydration; mother natures isotonic solution
- ¼ avocado sliced mono & poly-unsaturated fats, many nutrients +
smooth consistency
- 1 green “granny smith” apple cut into 1X1 inch cubes thickens smoothie, fiber
- ¼ – ½ c ice cubes
- Optional additional ingredients: cilantro, parsley, kale
Place spinach leaves, sliced cucumber and sliced celery into blender jar. Squeeze lemon over all before sealing with blender lid. Refrigerate until ready to blend.
Add coconut water and blend all together. Add apple, avocado, and other ingredients to taste.
Blend all together. Your smoothie consistency should be smooth, not lumpy.
A green smoothie can be used as a meal replacement or as a meal supplement. Leslie recommends a green smoothie to her personal training clients to supplement in between meals for a quick energy boost, instead of coffee. It really works.
Enjoy your “salad in a cup” in good health!
